Zab\u00edja\u010dka bola nev\u0161edn\u00e1 udalos\u0165, lebo vlastne \u0148ou sa zabezpe\u010dovali Pitvaro\u0161ania najz\u00e1kladnej\u0161\u00edmi a najpotrebnej\u0161\u00edmi potravinami a v\u00fdrobkami ako bola napr. brav\u010dov\u00e1 mas\u0165, slanina, m\u00e4so, klob\u00e1sy, at\u010f.. Prioritnou funkciou zab\u00edja\u010dky bolo spracova\u0165 <em>brava<\/em> na jedl\u00e1, ktor\u00e9 s\u00fdtili Pitvaro\u0161anov po cel\u00fd rok. Tam, kde si vedeli dobre zadeli\u0165, bola mas\u0165 a slanina a\u017e do novej\u00a0zab\u00edja\u010dky,<em> klb\u00e1sy\u00a0<\/em>a \u00fadeniny do leta. Chlieb so slaninou a cibu\u013eou bolo \u010dast\u00e9 a energeticky v\u00fddatn\u00e9 jedlo pri fyzicky n\u00e1ro\u010dnej pr\u00e1ci. V\u010faka dobr\u00fdm rodinn\u00fdm a\u00a0susedsk\u00fdm vz\u0165ahom, pri ktor\u00fdch bolo vz\u00e1jomne obdar\u00favanie, v\u00a0podstate vz\u00e1jomn\u00e1 v\u00fdmena \u010derstv\u00fdch zab\u00edja\u010dkov\u00fdch jed\u00e1l. Mas\u0165, slanina spravidla pretrv\u00e1vala do bud\u00facej zab\u00edja\u010dky, \u00fadeniny do leta. A\u00a0<em>klb\u00e1sa<\/em>? Kedy \u2013 ako.<\/p>\n<p style=\"text-align: justify;\">Zab\u00edja\u010dka na Pitvaro\u0161i nebola len o\u00a0zabit\u00ed <em>brava<\/em>, ale bola s\u00fa\u010das\u0165ou \u017eivota ka\u017ed\u00e9ho Pitvaro\u0161ana, mu\u017eov a\u00a0\u017eien, dospel\u00fdch i\u00a0det\u00ed. Ka\u017ed\u00fd prispel svojou \u010das\u0165ou a\u00a0roboty boli presne rozdelen\u00e9. \u0164a\u017eisko zabitia, rozporcovania prasa\u0165a a\u00a0spracovanie jeho \u010dast\u00ed na \u201e<em>klb\u00e1sy, hurke \u010di ma\u0165eja<\/em>\u201c bolo v\u00a0ruk\u00e1ch chlapov. \u017deny pripravovali n\u00e1sledn\u00e9 spracovanie a\u00a0pr\u00edpravu jed\u00e1l z t\u00fdchto produktov a deti pom\u00e1hali s\u00a0jednoduch\u0161\u00edmi pr\u00e1cami. Spracovanie <em>brava<\/em> (na Pitvaro\u0161i sa chovali predov\u0161etk\u00fdm mangalice) si v\u0161ak vy\u017eadovalo mno\u017estvo \u0161ikovn\u00fdch r\u00fak a preto sa na pomoc poz\u00fdvala i najbli\u017e\u0161ia rodina. Na zab\u00edja\u010dk\u00e1ch sa tak stret\u00e1vala i \u0161ir\u0161ia rodina. Navz\u00e1jom si v\u0161etci pom\u00e1hali. Bol to i \u010das stret\u00e1vania, rozpr\u00e1vania, pr\u00edbehov a samozrejme pr\u00edprav tradi\u010dn\u00fdch jed\u00e1l. Zab\u00edja\u010dka tak mala nielen hospod\u00e1rsky ale i spolo\u010densk\u00fd, \u00a0soci\u00e1lny a kult\u00farny v\u00fdznam a z\u00e1rove\u0148 vytv\u00e1rala pocit spolupatri\u010dnosti a budovania komunity v r\u00e1mci rodiny, \u010di obce. Zab\u00edja\u010dka sa v ka\u017edom dome skon\u010dila spravidla za jeden de\u0148. Rano o\u00a0piatej sa bude p\u00e1lenvo pi\u0165<\/em>.\u201c Zab\u00edja\u010dka bola odjak\u017eiva celorodinnou udalos\u0165ou. Neraz bola ako mal\u00e1 svadba, lebo bolo na nej pr\u00edtomn\u00fdch \u010dasto aj 30 \u013eud\u00ed (dospel\u00ed s\u00a0de\u0165mi). De\u0148 pred zab\u00edja\u010dkou sa dom\u00e1ci u\u00a0ktor\u00fdch sa mala zab\u00edja\u010dka kona\u0165 venovali naplno pr\u00edprave. Z\u00a0cesta, ktor\u00e9 bolo pripraven\u00e9 de\u0148 predt\u00fdm, \u017eeny upiekli predov\u0161etk\u00fdm <em>krump\u013eovie<\/em> alebo <em>sadlovie bag\u00e1\u0148e<\/em>, pr\u00edpadne varili i\u00a0paprik\u00e1\u0161. Mu\u017ei, ak to neurobili predch\u00e1dzaj\u00faci de\u0148, br\u00fasili no\u017ee a\u00a0pripravovali n\u00e1poje \u2013 p\u00e1len\u00e9 a\u00a0v\u00edno. Mu\u017ei, ktor\u00ed pri\u0161li pom\u00f4c\u0165 pri zab\u00edja\u010dke, sa za\u010dali sch\u00e1dza\u0165 okolo 5. hodiny, aby na svitan\u00ed <em>brav<\/em> bol nielen zaklat\u00fd, ale aj op\u00e1len\u00fd a\u00a0umyt\u00fd. Ke\u010f\u017ee pomoc \u017eien bola potrebn\u00e1 nesk\u00f4r, sta\u010dilo, ke\u010f pri\u0161li okolo 7 &#8211; 8. hodine. Je v\u0161ak samozrejm\u00e9, \u017ee man\u017eelia prich\u00e1dzaj\u00faci z\u00a0v\u00e4\u010d\u0161ej vzdialenosti, pri\u0161li spolu. Pomocn\u00edkov u\u017e pri pr\u00edchode dom\u00e1ci nie\u010d\u00edm pon\u00fakli, oby\u010dajne p\u00e1len\u00fdm a\u00a0<em>bag\u00e1\u0148mi<\/em>, pr\u00edpadne ak z\u00a0minuloro\u010dnej zab\u00edja\u010dky e\u0161te ostalo zo suchej klob\u00e1sy, tak aj s tou.<\/p>\n<p style=\"text-align: justify;\"><strong>Chytanie brava <\/strong><\/p>\n<p style=\"text-align: justify;\">Ke\u010f sa v\u0161etci mu\u017ei zi\u0161li a\u00a0v\u0161etko bolo pripraven\u00e9, tak samotn\u00fd proces zab\u00edja\u010dky za\u010dal s\u00a0chytan\u00edm <em>brava<\/em>. Ak boli zab\u00edja\u010di mlad\u00ed, siln\u00ed a\u00a0mr\u0161tn\u00ed, <em>bravy<\/em> vypustili z\u00a0chlieva, nech pobehuj\u00fa a unavia sa. Chytalo sa potom na dvore. Ne\u0161lo to v\u017edy \u013eahko, zdivo\u010den\u00e9 zviera veru niekedy poriadne popreh\u00e1\u0148alo chytaj\u00facich. Pri chytan\u00ed <em>brava<\/em> sa tak prihodilo i mno\u017estvo vesel\u00fdch pr\u00edhod, na ktor\u00e9 pam\u00e4tn\u00edci dodnes s\u00a0\u00fasmevom spom\u00ednaj\u00fa. Zak\u00e1\u013eanie vykon\u00e1val najstar\u0161\u00ed \u010dlen zab\u00edja\u010dky, ale v\u00a0mnoh\u00fdch pr\u00edpadoch to vykonal rad\u0161ej najzbehlej\u0161\u00ed a naj\u0161ikovnej\u0161\u00ed spomedzi mu\u017eov. Zab\u00edja\u010d pri zabit\u00ed brava pou\u017e\u00edval \u0161peci\u00e1lny, \u00fazky, ostr\u00fd a\u00a0hlavne kon\u010dit\u00fd n\u00f4\u017e na bodanie. Pri kvikotan\u00ed <em>brava<\/em> kl\u00e1\u010d vbodol zviera\u0165u n\u00f4\u017e do spodnej \u010dasti podbradku medzi dve predn\u00e9 nohy v\u00a0strednej \u010dasti prie\u010dne do h\u013abky 20-30 cm smerom dozadu, do srdcovej komory zviera\u0165a. Vbodnutie bolo \u00faspe\u0161n\u00e9 a\u00a0dobr\u00e9 v\u00a0tom pr\u00edpade, ke\u010f krv zo zviera\u0165a vystrekla siln\u00fdm pr\u00fadom, v\u0161etka vytiekla, vn\u00fatro zviera\u0165a neostalo krvav\u00e9 ale \u010dist\u00e9. Samozrejme, vbodnutie sa nie v\u017edy podarilo perfektne. Stalo sa, \u017ee zab\u00edja\u010d vpichol n\u00f4\u017e aj dva a\u017e trikr\u00e1t, a\u00a0prihodilo sa aj to, \u017ee zranen\u00e9 zviera striaslo zo seba chytaj\u00facich a\u00a0u\u0161lo, \u010do vo dvore vyvolalo v\u0161eobecn\u00e9 veselie, iba zak\u00e1\u013ea\u010dovi nebolo do smiechu.<\/p>\n<p style=\"text-align: justify;\">Po zabodnut\u00ed no\u017ea do <em>brava<\/em> si skupina mu\u017eov na kr\u00e1tku chv\u00ed\u013eu odd\u00fdchla. Gazda vtedy ka\u017ed\u00e9ho nie\u010d\u00edm pon\u00fakol, mu\u017ei dostali <em>p\u00e1lenvo<\/em> alebo kv\u00f4li studen\u00e9mu po\u010dasiu <em>varenvo v\u00edno<\/em>, \u017eeny hor\u00faci \u010daj &#8211; <em>hor\u00facu teju<\/em>. Pripilo sa slovami: \u201e<em>na zdravia<\/em>\u201c a so \u017eelan\u00edm: \u201e<em>aby ste na takto na rok zab\u00edjali e\u0161te v\u00e4\u010d\u0161ie bravy<\/em>\u201c.<\/p>\n<p style=\"text-align: justify;\">Jedn\u00fdm z\u00a0ved\u013eaj\u0161\u00edch produktov pri zak\u00e1\u013ean\u00ed bola zo zvierat vytekaj\u00faca krv. D\u00e1vnej\u0161ie, e\u0161te i\u00a0zo za\u010diatku minul\u00e9ho storo\u010dia, krv nez\u00fa\u017eitkovali, nechali ju vo\u013ene odtiec\u0165, psy ju pol\u00edzali alebo sliepky pozobali. Pravdepodobnou pr\u00ed\u010dinou bola viera a povery. \u013dudia verili, \u017ee du\u0161a zviera\u0165a je i v\u00a0krvi, a\u00a0preto sa nesmela jes\u0165, bol by to hriech. Po prvej svetovej vojne u\u017e nenechali krv zabit\u00fdch <em>bravov<\/em> vo\u013ene odtiec\u0165, ale ju pou\u017eili na pr\u00edpravu krvavni\u010diek. S\u010dasti stuhnut\u00fa krv (pr\u00edpadne spolu s\u00a0pe\u010de\u0148ou) na cibuli usma\u017eili (<em>pra\u017een\u00e1 kr\u00fa<\/em>), d\u00f4kladne okorenili so\u013eou a\u00a0\u010diernym koren\u00edm, a\u00a0po\u010das rozoberania <em>brava<\/em> ka\u017ed\u00e9mu sa u\u0161lo nieko\u013eko chutn\u00fdch hltov. Gazdin\u00e1 v\u017edy rozhodla, ko\u013eko krvi bude potrebova\u0165. Pr\u00fadom vytekaj\u00facu krv chytali do misky alebo do vandl\u00edku &#8211;\u00a0<em>vaj\u013einga.<\/em> Krv, ktor\u00fa sa chystali prida\u0165 do krvavni\u010diek, nesmeli necha\u0165 stuhn\u00fa\u0165, preto ju okam\u017eite posolili a\u00a0r\u00fdchlo, dlho mie\u0161ali. No krv, ktor\u00fa mienili usma\u017ei\u0165, nechali stuhn\u00fa\u0165, aby sa tak po kusoch dala usma\u017ei\u0165. Do prvej svetovej vojny opa\u013eovali v\u00fdlu\u010dne p\u0161eni\u010dnou slamou, po vojne slamou aj strojom\u00a0 &#8211; <em>opa\u013eov\u00e1cou ma\u0161inkou<\/em>, dnes naj\u010dastej\u0161ie plynom.<\/p>\n<p style=\"text-align: justify;\">Star\u00fd sp\u00f4sob opa\u013eovania so slamou prebiehal takto:<\/p>\n<p style=\"text-align: justify;\">Zab\u00edja\u010di polo\u017eili zviera na brucho, nohy mu vystreli tak, \u017ee predn\u00e9 smerovali dopredu, zadn\u00e9 dozadu. Potom pokryli zviera rovnomerne hrubou vrstvou slamy, ktor\u00fa zap\u00e1lil proti smeru vetra, aby nevzplanula naraz, ale pekne rovnomerne horela. <em>Bravy<\/em> opa\u013eovali slamou, ktor\u00fa oby\u010dajne chlapci \u0165ahali zo stohu kva\u010dkou. Bolo to nie\u010do ok\u00faz\u013euj\u00faceho a\u00a0neoby\u010dajn\u00e9ho, nie ka\u017edodenn\u00e9ho, najm\u00e4 pre deti. Aby ohe\u0148 nevyhasol (<em>nezdochou<\/em>) deti kl\u00e1dli mal\u00fd ohn\u00edk, pravda s\u00a0mokrou slamou, aby sa sp\u00e1lilo \u010d\u00edm menej dobrej slamy. \u0160etrilo sa v\u0161ade.<\/p>\n<p style=\"text-align: justify;\">Ke\u010f zhorela prv\u00e1 d\u00e1vka slamy, zab\u00edja\u010d vidlami d\u00f4kladne zotrel chrb\u00e1t <em>brava<\/em> a\u00a0zhoren\u00fa srs\u0165 alebo <em>per\u0148u<\/em> o\u0161krabal lopatou alebo no\u017eom. Potom \u017eelezn\u00fdmi vidlami prestrel \u010fal\u0161iu d\u00e1vku slamy na boky zviera\u0165a a opa\u013eoval \u010falej, pri\u010dom st\u00e1le pokra\u010doval v\u00a0\u0161kraban\u00ed. Ke\u010f chrb\u00e1t a\u00a0boky boli u\u017e do\u010dista op\u00e1len\u00e9, oto\u010dil zviera na chrb\u00e1t, podopreli ho dvoma tehlami, medzi nohy nalo\u017eili slamu. P\u00e1lenie a\u00a0\u0161krabanie opakovali pod\u013ea potreby. Pri opa\u013eovan\u00ed slamou, ak bol <em>brav<\/em> tu\u010dn\u00fd, ostala v\u017edy\u00a0 pri u\u0161iach a\u00a0chvoste nesp\u00e1len\u00e1 srs\u0165, ktor\u00fa nebolo mo\u017en\u00e9 slamou odstr\u00e1ni\u0165, lebo okolit\u00e9 \u010dasti by boli zhoreli. Tak\u00fa skryt\u00fa srs\u0165 odstr\u00e1nili roz\u017eeraven\u00fdmi opa\u013eovac\u00edmi vidlami. Ke\u010f po\u010das opa\u013eovania kolienka rozp\u00e1lili, zab\u00edja\u010d chytil nechty a\u00a0r\u00fdchlym oto\u010den\u00edm, trhnut\u00edm ich strhol a\u00a0zahodil.<\/p>\n<p style=\"text-align: justify;\">Medzi dvoma svetov\u00fdmi vojnami pri\u0161lo do m\u00f3dy opa\u013eovanie strojom<em> (opa\u013eov\u00e1cou ma\u0161inkou)<\/em>, ktor\u00fd \u010doskoro vytla\u010dil tradi\u010dn\u00e9 opa\u013eovanie slamou. Opa\u013eovac\u00ed stroj bol zhotoven\u00fd zo siln\u00e9ho plechu, mal ohniskov\u00fd bubon, ktor\u00fd \u201ek\u0155mili\u201c \u0161\u00fa\u013ekami alebo najrad\u0161ej ag\u00e1tom, nasekan\u00fdm v\u00a0hr\u00fabke palca alebo \u0161\u00fa\u013eka. Plame\u0148 na telo zviera\u0165a f\u00fakal ventil\u00e1tor poh\u00e1\u0148an\u00fd reme\u0148om. Tepl\u00e9ho, takmer hor\u00faceho <em>brava<\/em>, le\u017eiaceho na boku, poliali vla\u017enou vodou aby\u00a0sa popol, ktor\u00fd ostal po opa\u013eovan\u00ed zmyl. Od konca nosa a\u017e po chvost cel\u00e9ho natreli. Potom za spodn\u00e9 nohy zviera prevr\u00e1tili cez chrb\u00e1t a\u00a0poliali a\u00a0natreli aj druh\u00fd bok. Nieko\u013eko min\u00fat ho nechali tak, k\u00fdm sa na tele <em>brava<\/em> uvo\u013en\u00ed, odpar\u00ed ka\u017ed\u00e9 ne\u017eiad\u00face zne\u010distenie, ktor\u00e9 tam po opa\u013eovan\u00ed e\u0161te ostalo. Nasledovalo \u0161krabanie, ktor\u00e9 robil zab\u00edja\u010d, k\u00fdm jeho \u017eena liala tenk\u00fd pr\u00fad vody z\u00a0d\u017eb\u00e1nu v\u017edy tam, kde n\u00f4\u017e \u0161krabal. \u0160kraba\u0165 sa mohlo hociktor\u00fdm kuchynsk\u00fdm no\u017eom. Obhoren\u00e1 srs\u0165 sa zo\u0161krabovala dreven\u00fdm alebo tup\u00fdm okrajom kovov\u00e9ho no\u017ea. Nesmela sa ko\u017ea poreza\u0165. Po o\u010disten\u00ed jedn\u00e9ho boku <em>brava<\/em>, prestreli pod chrb\u00e1t zviera\u0165a pekn\u00fa \u010dist\u00fa slamu a\u00a0uchopen\u00edm za dve predn\u00e9 nohy <em>brava<\/em> obr\u00e1tili. Takto sa \u010dist\u00fd bok dostal na slamu a\u00a0vrchn\u00fa e\u0161te ne\u010dist\u00fa \u010das\u0165 bolo mo\u017en\u00e9 o\u0161kraba\u0165 a\u00a0umy\u0165. Nakoniec zviera obr\u00e1tili na chrb\u00e1t a\u00a0pustili sa do \u010distenia bru\u0161nej \u010dasti. Kolienka aj nechty polievali a\u00a0kefovali, k\u00fdm sa v\u0161etky \u010diasto\u010dky bielo neligotali. Pri za\u010dat\u00ed tejto pr\u00e1ce le\u017eal <em>brav<\/em> na chrbte. Vykrojila sa \u0161unka na Ve\u013ek\u00fa noc,\u00a0<em>boke\u00a0<\/em>slaniny sa solili. Solilo a chystalo sa\u00a0<em>meso\u00a0<\/em>na \u00fadenie, kr\u00e1jalo sa do\u00a0<em>klb\u00e1s.\u00a0<\/em>Zab\u00edja\u010d odrezal najprv kolienka, n\u00e1sledne rozoberac\u00edm no\u017eom vykrojil spolu so stehnom dve predn\u00e9 nohy (<em>pre\u0148ie nohe<\/em>), potom dve zadn\u00e9 nohy (<em>za\u0148ie nohe<\/em>), pri\u010dom d\u00e1val pozor na to, aby sa z\u00a0nich nesk\u00f4r mohli robi\u0165 pekne tvarovan\u00e9 \u0161unky. Vyseknut\u00e9 nohy pomocn\u00e1 sila, zaniesla do domu na ve\u013ek\u00fd zab\u00edjac\u00ed st\u00f4l. Medzit\u00fdm zab\u00edja\u010d obkr\u00fa\u017eil zadnicu, potom u\u017e beznoh\u00e9 telo obr\u00e1til na brucho. Nasledovalo od\u0148atie vrchu hlavy. Zab\u00edja\u010d obkr\u00fa\u017eil hlavu v\u00a0tyle a\u00a0malou sekerkou \u2013 <em>bauti\u010dkou<\/em>, ktor\u00e1 teraz prv\u00fdkr\u00e1t bola potrebn\u00e1, oddelil vrchn\u00fa \u010das\u0165 od tela, od chrbtice. Potom no\u017eom prerezal chrbtov\u00fa slaninu pozd\u013a\u017e chrbtice na obidvoch stran\u00e1ch a\u00a0<em>bauti\u010dkou<\/em> na obidvoch stran\u00e1ch chrbtice pre\u0165al rebr\u00e1. Zab\u00edja\u010d potom obrezal kone\u010dn\u00edkov\u00fd otvor. Z\u00a0otvoren\u00e9ho <em>brava <\/em>vybrali v\u00a0jednom kuse jazyk, p\u013e\u00faca, hltan a\u00a0srdce. Srdce rozrezali, aby sa z\u00a0neho dostala krv. Jazyk, p\u013e\u00faca a\u00a0srdce sa dali do studenej vody, aby sa vymo\u010dili, lebo tieto vn\u00fatornosti boli oby\u010dajne ve\u013emi krvav\u00e9. \u010ealej vybrali pe\u010de\u0148, \u017eal\u00fadok a\u00a0\u010drev\u00e1, \u010do bolo treba robi\u0165 ve\u013emi opatrne, aby sa \u010drev\u00e1 niekde neroztrhli a\u00a0v\u00fdkaly neza\u0161pinili, nezasmradili cel\u00e9 vn\u00fatro <em>brava<\/em>. N\u00e1sledne vybrali \u010fal\u0161ie vn\u00fatornosti ako sadlo, \u013eadviny, mech\u00far. Mech\u00far sa odhodil. Potom vybrali lopatky, rebr\u00e1 a\u00a0kr\u00ed\u017eov\u00fa kos\u0165 &#8211; <em>kr\u00ed\u017enik.<\/em> Slaninu na bruchu rozpolili, dostali tak dva boky slaniny, ktor\u00e9 ihne\u010f vyniesli na povalu, aby vychladli, potom ich nalo\u017eili jedno na druh\u00e9 do ve\u013ek\u00e9ho koryta na solenie a\u00a0posolili. Doln\u00e9 \u010de\u013euste podobne \u00fadili a\u00a0jedli varen\u00e9 v\u00a0polievke.<\/p>\n<p style=\"text-align: justify;\">Kto nevedel rozobera\u0165 <em>brava<\/em>, ten bol u\u017eito\u010dn\u00fd t\u00fdm, \u017ee nosil odrez\u00e1van\u00e9 kusy m\u00e4sa dovn\u00fatra &#8211;<em>tanu<\/em>. Ke\u010f u\u017e bolo v\u0161etko vo vn\u00fatri, tak nasledovalo obrez\u00e1vanie m\u00e4sa a\u00a0odde\u013eovanie od kosti. Toto sa robilo vo vn\u00fatri v\u00a0kuchyni (pitvor), alebo v\u00a0<em>chi\u017ei<\/em>. Slovom, tam kde sa robilo s\u00a0<em>bravom<\/em>. Tu sa potom robili a\u00a0nadievali ve\u013emi chutn\u00e9 a\u00a0na \u0161irokom okol\u00ed ve\u013emi ob\u013e\u00faben\u00e9 pitvaro\u0161sk\u00e9 <em>klb\u00e1sy<\/em>.<\/p>\n<p style=\"text-align: justify;\">K\u00fdm sa zab\u00edja\u010di zapodievali touto pr\u00e1cou, ani \u017eeny nele\u0148o\u0161ili. Ony um\u00fdvali \u010drev\u00e1. Najprv v\u0161ak bolo treba rozobra\u0165 jednotliv\u00e9 \u010dasti: pe\u010dienku, bachor, \u010drev\u00e1. Po rozoberan\u00ed odstr\u00e1nili z\u00a0\u010driev tuk. V\u00fdkal z\u00a0\u010driev p\u00fa\u0161\u0165ali do vedier, v\u00a0ktor\u00fdch to aj vyniesli, potom nasledovalo vlastn\u00e9 um\u00fdvanie. Oddelene um\u00fdvali tenk\u00e9 \u010drev\u00e1, ktor\u00e9 vyvr\u00e1tili, a\u00a0tak ich vy\u010distili. K\u00a0um\u00fdvaniu patrilo i\u00a0odstr\u00e1nenie vn\u00fatornej sliznice &#8211; <em>\u0161\u013eamovanie<\/em>. Vn\u00fatro \u010dreva o\u0161krabali tupou hranou no\u017ea alebo k\u00faskom hladkej dosky. Bola to n\u00e1ro\u010dn\u00e1 pr\u00e1ca, lebo tenk\u00e1 stena \u010dreva sa \u013eahko roztrhla, <em>\u0161\u013eamovanie<\/em> bolo treba robi\u0165 preto opatrne. Tenk\u00e9 i\u00a0hrub\u00e9 \u010drev\u00e1 pred umyt\u00edm rozk\u00faskovali, naliali do nich vodu a\u00a0tro\u0161ka ich premyli, pri\u010dom ich aj vyvr\u00e1tili. Aby odstr\u00e1nili nepr\u00edjemn\u00fd z\u00e1pach, \u010drev\u00e1 nam\u00e1\u010dali v\u00a0octovej alebo cibu\u013eovej vode. Ve\u010dera sa za\u010dala a kon\u010dila modlitbou. Po dobre vykonanej pr\u00e1ci sa jedlo, oddychovalo a zhov\u00e1ralo. Na ve\u010deru pod\u00e1vali tradi\u010dne tie ist\u00e9 jedl\u00e1. Pod\u00e1vala sa polievka z kost\u00ed so\u00a0<em>\u0161ifl\u00edkami,\u00a0<\/em>varen\u00e9\u00a0<em>meso\u00a0<\/em>s paradajkovou, vi\u0161\u0148ovou alebo egre\u0161ovou om\u00e1\u010dkou. Tradi\u010dn\u00fdm jedlom bol plnen\u00fd kapustn\u00fd list <strong>&#8211;\u00a0<\/strong><em>s\u00e1rma.\u00a0<\/em>\u010eal\u0161\u00edm jedlom na\u00a0zab\u00edja\u010dkovej\u00a0hostine bol paprik\u00e1\u0161 s\u00a0<em>kir\u00e1\u013ekou\u00a0<\/em>(hlavn\u00e1 srdcov\u00e1 tepna), s u\u0161kami a r\u00f4znymi druhmi\u00a0<em>mesa.\u00a0<\/em>Po paprik\u00e1\u0161i nasledovala koruna ve\u010dere &#8211;\u00a0 pe\u010den\u00e1 <em>hurka<\/em> a\u00a0<em>klb\u00e1sa<\/em>. Pri ka\u017edom chode chv\u00e1lili toho, ktor\u00fd ho pripravil. Z\u00e1bavn\u00e9 bolo, ke\u010f po\u010das ve\u010dere pri\u0161li sadzou poma\u013eovan\u00ed a zamaskovan\u00ed zn\u00e1mi alebo susedia \u201es\u00a0<em>cig\u00e1nkami&#8220;,\u00a0<\/em>a zmenen\u00fdmi hlasmi\u00a0<em>vydrank\u00e1va\u013ei\u00a0<\/em>jedlo pre hladn\u00e9 deti\u010dky. Zhov\u00e1ralo sa a aj pop\u00edjalo. Najviac sa spom\u00ednalo na\u00a0svetov\u00fa vojnu, ako kto bojoval, ako sa skr\u00fdvali pred nepriate\u013eskou strelou, ako hladovali a\u00a0te\u0161ili sa, ke\u010f bol pokoj od bojovania. P\u00e1n far\u00e1r si teda nalo\u017eil pln\u00fd tanier, aby sa poriadne najedol. Po s\u00e1rme pri\u0161iel na rad paprik\u00e1\u0161. U\u00a0\u0160upalov mu povedali: \u201eIba br\u00ed\u013eajte p\u00e1n far\u00e1r, ve\u010f aj prasa br\u00ed\u013ealo\u201c. No a\u00a0po paprik\u00e1\u0161i pri\u0161li na rad hurke a\u00a0klb\u00e1sy. P\u00e1n far\u00e1r by si bol ve\u013emi dal, ale u\u017e sa mu nezmestilo.\u201c <\/em>Aj tak\u00e9to \u017eartovanie bolo na zab\u00edja\u010dk\u00e1ch. P\u00e1n far\u00e1r samozrejme domov neodi\u0161iel napr\u00e1zdno, ale aj s\u00a0v\u00fdslu\u017ekou, kde bola i\u00a0<em>klb\u00e1sa<\/em> a\u00a0<em>hurka<\/em>.<\/p>\n<p style=\"text-align: justify;\">\u0160tefan Hud\u00e1k (1923-2005) si na\u00a0zab\u00edja\u010dku<em>\u00a0<\/em>spom\u00ednal takto: <em>\u201eMy, deti, sme sa preto te\u0161ili\u00a0zab\u00edja\u010dk\u00e1m,\u00a0lebo sme sa zi\u0161la cel\u00e1 rodina, napr. u n\u00e1s sa zi\u0161li\u00a0\u0161eci\u00a0Hud\u00e1kovci a Dov\u00e1\u013eovci, a u\u017e sme spolo\u010dne vystr\u00e1jali, trochu aj pom\u00e1hali v pr\u00e1ci. No a po ve\u010deri sa nepon\u00e1h\u013ealo domov, ale sa rozpr\u00e1valo o tom, komu sa \u010do dar\u00ed &#8211; nedar\u00ed a ve\u013ea sa rozpr\u00e1valo o vojne, ako bojoval niektor\u00fd \u010dlen rodiny na ruskom, talianskom fronte a podobne. Nezriedka sa presedelo aj do polnoci, pri\u010dom sa spievalo a po\u010d\u00favala hra na\u00a0tambor\u00e1ch,\u00a0ako sa pretekali\u00a0b\u00e1\u010di\u00a0Ondro Hud\u00e1kov s niektor\u00fdm Dov\u00e1\u013eom. Potom sa spievali n\u00e1rodn\u00e9 piesne: Hoj\u017ee bo\u017ee&#8230;, Kto za pravdu hor\u00ed&#8230;, Hej Slov\u00e1ci&#8230;, V slz\u00e1ch mati\u010dka sedela&#8230; a podobn\u00e9 dobre zn\u00e1me a ob\u013e\u00faben\u00e9 n\u00f4ty, ktor\u00fdmi sa n\u00e1rodne utvrdzovali a skoro v\u017edy sme zat\u00fa\u017eili po Slovensku, ale na to sme veru nemysleli v 30-tych rokoch, \u017ee budeme \u0161\u0165astne \u017ei\u0165 vo vyt\u00fa\u017eenej vlasti Slov\u00e1kov. U\u017e d\u00e1vno, hoci sme nemysleli na ozajstn\u00e9 pres\u00eddlenie, tr\u00e1pilo aj na\u0161ich prarodi\u010dov, \u017ee ich chc\u00fa silou &#8211; mocou poma\u010far\u010di\u0165. <\/em><em>U\u00a0n\u00e1s v\u00a0na\u0161ej Hud\u00e1kovskej rodine na zab\u00edja\u010dk\u00e1ch pred ve\u010derou, ke\u010f sa u\u017e v\u0161etko porobilo, iba \u017eeny chystali tie chutn\u00e9 pamp\u00fa\u0161ky. My deti sme si posadali okolo peci a\u00a0b\u00e1\u010di \u0160tefan Hud\u00e1kov n\u00e1m rozp\u00e1vali rozpr\u00e1vky \u201eh\u00e1dke\u201c ako oni hovorili. Jednu kraj\u0161iu a\u00a0zauj\u00edmavej\u0161iu ako druh\u00fa. Rozpr\u00e1vky sa v\u017edy za\u010d\u00ednali tak\u00fdmto obvykl\u00fdm sp\u00f4sobom: \u201e\u010ee bolo, tan bolo, v\u00a0sedem\u010fesiatej siedmej kraji\u0148e, \u010fe \u010dobo\u013ea poh\u00e1\u0148ala a\u00a0sklienka za pluchom chodila, de balangovom br\u00e1\u0148ili, \u010fe \u010dunek \u0160acko za nimi s\u00a0gajdami cho\u010fil&#8230;\u201c. Mnoh\u00e9 rodiny, ktor\u00e9 predt\u00fdm b\u00fdvali v\u00a0jednej obci, \u010di dobr\u00fd susedovci z\u00a0ulice, boli po pres\u00eddlen\u00ed neraz rozdelen\u00ed do viacer\u00fdch obc\u00ed. Pri rodinn\u00fdch udalostiach ako krst, svadba \u010di pohreb ale napr\u00edklad aj pri zab\u00edja\u010dke bolo tak treba zvol\u00e1va\u0165 rodinu \u010dasto i\u00a0z\u00a0v\u00e4\u010d\u0161ej vzdialenosti. Ako i\u00a0zab\u00edja\u010dkov\u00e9 jedl\u00e1 pomaly ustupuj\u00fa nov\u00fdm trendom stravovania, tak i\u00a0trad\u00edcia zab\u00edja\u010diek, ako miesto stret\u00e1vania sa rod\u00edn, vz\u00e1jomnej pomoci, spolupatri\u010dnosti, trad\u00edci\u00ed, pr\u00edbehov i\u00a0nav\u0161tevovania tak postupne zanik\u00e1.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><strong>Vybran\u00e9 zab\u00edja\u010dkov\u00e9 jedl\u00e1<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>Pitvaro\u0161sk\u00e1 <em>klb\u00e1sa<\/em>\u00a0<\/strong><\/p>\n<p style=\"text-align: justify;\">Klob\u00e1sy, to je ak\u00e1si dolnozemsk\u00e1 \u0161pecialita, zvl\u00e1\u0161tnos\u0165. S\u00fa ve\u013emi v\u00fd\u017eivn\u00e9 a\u00a0pritom v\u00fdborne chutia. Prav\u00e1 pitvaro\u0161sk\u00e1 <em>klb\u00e1sa<\/em> sa pripravovala z\u00a0\u010dist\u00e9ho brav\u010dov\u00e9ho m\u00e4sa, pod\u013ea mo\u017enosti bola plnen\u00e1 do brav\u010dov\u00e9ho \u010dreva, korenen\u00e1 so\u013eou, mal\u00fdm mno\u017estvom cesnaku a\u00a0rasci, hlavne paprikou, nemrv\u00ed sa, ale ani nie je tvrd\u00e1, dobre sa kr\u00e1ja, je \u0161\u0165avnat\u00e1, \u0161tip\u013eav\u00e1, s\u00fdtej \u010dervenej farby, mierne chutn\u00e1 dymom, je to trvanliv\u00e1, tenk\u00e1 alebo hrub\u00e1 klob\u00e1sov\u00e1 poch\u00fa\u0165ka. Do m\u00e4sovej zmesy do <em>klb\u00e1s<\/em> sa vykrajovalo predov\u0161etk\u00fdm m\u00e4so a\u00a0niekde sa nechala aj tro\u0161ku slaninka, aby <em>klb\u00e1sa<\/em> nebola pr\u00edli\u0161 such\u00e1. Ve\u010f ako sa na Pitvaro\u0161i hovorievalo: \u201e<em>Klb\u00e1sa nesmie by\u0165 ve\u013emej such\u00e1, dobr\u00e1 klb\u00e1sa je tak\u00e1, ker\u00e1 sa v\u00a0\u00fastach vy\u0161t\u00ed<\/em>\u201c (vysvetlenie: pust\u00ed \u0161\u0165avu). Nebol zvyk hov\u00e4dzie m\u00e4so mie\u0161a\u0165 do brav\u010dov\u00e9ho m\u00e4sa. \u013dudia vraveli, \u017ee od toho bude tvrd\u00e1 klb\u00e1sa. Pod\u013ea spomienok pam\u00e4tn\u00edkov sa na Pitvaro\u0161i za\u010dali robi\u0165 prv\u00e9 <em>klb\u00e1sy<\/em> okolo roku 1850.<\/p>\n<p style=\"text-align: justify;\">Dolnozemsk\u00e1\u00a0<em>klb\u00e1sa<\/em> &#8211; na 4 kg brav\u010dov\u00e9ho pliecka, 1 kg prerasten\u00e9ho b\u00f4\u010dika, dve hl\u00e1vky cesnaku, 5 ly\u017e\u00edc soli (no\u017eom zarovnan\u00e1 polievkov\u00e1 ly\u017eica), 10 a\u017e 15 dkg \u010dervenej sladkej papriky, 5 dkg \u0161tip\u013eavej papriky. Dva bal\u00ed\u010dky rasce, \u010derstvo zomletej, ale drvenej. Recept je dos\u0165 v\u0161eobecn\u00fd. Chu\u0165 a kvalita je z\u00e1visl\u00e1 od r\u00f4znosti a kvality m\u00e4sa, tie\u017e od kvality koren\u00edn. Na dobr\u00fa letn\u00fa hrub\u00fa\u00a0<em>klb\u00e1-su\u00a0<\/em>je vraj najvhodnej\u0161ie m\u00e4so z dobre vyk\u0155menej, ale nie starej prasnice.\u00a0<em>Klb\u00e1sy\u00a0<\/em>s\u00fa \u0161\u0165avnatej\u0161ie a nevyschn\u00fa tak, ako z mlad\u0161\u00edch <em>bravov<\/em>. Sorta \u0161tip\u013eavej a vo\u0148avej papriky je s dlh\u00fdmi\u00a0<em>me\u0161\u0165okami\u00a0<\/em>a pestuje sa na Dolnej zemi. Aj cesnak mus\u00ed by\u0165 zdrav\u00fd str\u00fa\u010dky maj\u00fa by\u0165 tuh\u00e9. Mlet\u00e1 rasca m\u00f4\u017ee by\u0165 dos\u0165 vyp\u00e1chnut\u00e1. Dobre je \u010derstvo nadrvi\u0165 cel\u00fa rascu. D\u00e1va ar\u00f3mu okam\u017eite a aj postupne. Vymie\u0161an\u00e9 m\u00e4so sa\u00a0<em>ko\u0161t\u00fava\u00a0<\/em>a prichu\u0165uje. Bola s\u00fa\u010das\u0165ou jed\u00e1lni\u010dka a\u00a0pou\u017e\u00edvala sa i\u00a0pri pr\u00edprave jed\u00e1l. D\u00e1 sa poveda\u0165, \u017ee v\u00fdborn\u00e1 <em>klb\u00e1sa<\/em> je ako chlieb, nikdy sa neodje. Klob\u00e1sa sa dostala aj do hovorovej re\u010di a\u00a0pri pr\u00edhovoroch sa zvyklo hovorieva\u0165: \u201e<em>Re\u010di maj\u00fa by\u0165 kr\u00e1tke a\u00a0klb\u00e1sa dlh\u00e1<\/em>\u201c. Text samozrejme vyznel dvojzmyselne, ale podobn\u00e9 obrazy dojzmyselnosti boli na Pitvaro\u0161i zvykom i\u00a0pri svadobn\u00fdch pr\u00edhovoroch a\u00a0vin\u0161och. S\u00fa\u010das\u0165ou spolo\u010densk\u00fdch udalost\u00ed na Pitvaro\u0161i\u00a0 boli\u00a0 i r\u00f4zne prek\u00e1ra\u010dky a\u00a0humorn\u00e9 dvojzmyseln\u00e9 nar\u00e1\u017eky ako napr: \u201e<em>Pochovajte ho do p\u00e1sa, aby mu nezhnila klb\u00e1sa<\/em>\u201c.<\/p>\n<p style=\"text-align: justify;\"><em>Klb\u00e1sa<\/em> najlep\u0161ie chut\u00ed s\u00a0\u010derstv\u00fdm dom\u00e1cim chlebom upe\u010den\u00fdm z\u00a0pece. Chleby na Pitvaro\u0161i sa robili ve\u013ek\u00e9 v\u00a0porovnan\u00ed s\u00a0chlebami ak\u00e9 dnes pozn\u00e1me be\u017ene na Slovensku. Na v\u00fd\u0161ku mali \u010dasto aj 30 cm a\u00a0na vrchu boli riadne pripe\u010den\u00e9. Ke\u010f sa rodina gazdov chcela niekomu, kto im pomohol, alebo jednoducho ctenej osobe, lek\u00e1rovi, advok\u00e1tovi, far\u00e1rovi, u\u010dite\u013eovi nie\u010d\u00edm odv\u010fa\u010di\u0165, svoju v\u010faku vyjadrila darovan\u00edm hrubej <em>klb\u00e1sy<\/em>.<\/p>\n<p style=\"text-align: justify;\">So zna\u010dkou \u201ePitvaro\u0161sk\u00e1 klob\u00e1sa\u201c sa m\u00f4\u017eeme ob\u010das stretn\u00fa\u0165 aj v\u00a0obchode. Raz sme chceli prekvapi\u0165 m\u00f4jho star\u00e9ho otca J\u00e1na Ka\u0161\u00edka (1921-2005) a\u00a0k\u00fapili sme mu jednu \u201ePitvaro\u0161sk\u00fa klob\u00e1su\u201c. Klob\u00e1sa sa svojim vzh\u013eadom i\u00a0\u0161trukt\u00farou podobala viac na sal\u00e1mu a dedko hne\u010f po prvom zahryznut\u00ed povedal jednozna\u010dne: \u201e<em>Toto je \u0148i, pitvaro\u0161sk\u00e1 klb\u00e1sa<\/em>\u201c.<\/p>\n<p style=\"text-align: justify;\"><strong>S\u00e1rma<\/strong><\/p>\n<p style=\"text-align: justify;\">Plnen\u00fd kapustn\u00fd list &#8211;\u00a0<em>s\u00e1rma &#8211;\u00a0<\/em>hlavn\u00e9\u00a0zab\u00edja\u010dkov\u00e9\u00a0a chutn\u00e9 jedlo. Pripravuje sa z podobne mlet\u00e9ho brav\u010dov\u00e9ho m\u00e4sa ako\u00a0<em>klb\u00e1sa.\u00a0<\/em>M\u00e4so je rovnako ako na\u00a0<em>klb\u00e1su\u00a0<\/em>z r\u00f4znych \u010dast\u00ed zaklat\u00e9ho <em>brava<\/em> (pliecko, stehno, b\u00f4\u010dik, rebr\u00e1&#8230;). Na l kg m\u00e4sa sa prid\u00e1 jedno vajce, 10 polievkov\u00fdch ly\u017e\u00edc ry\u017ee, (ke\u010f nebola ry\u017ea, prid\u00e1valo sa, podobne ako do\u00a0<em>huriek,\u00a0<\/em>proso) so\u013e, mlet\u00e1 paprika, sladk\u00e1 aj p\u00e1liv\u00e1, \u010dierne korenie a dobre v\u0161etko vymie\u0161ame. Bu\u010f m\u00e1me cel\u00e9 hl\u00e1vky kapusty kvasen\u00e9 alebo nekvasen\u00fa riedku hl\u00e1vku obar\u00edme hor\u00facou vodou a d\u00e1me na nieko\u013eko dn\u00ed do s\u00fadka s kyslou kapustou, aby sa tam rozrobila. Pred varen\u00edm pln\u00edme kapustn\u00e9 listy a zakr\u00fatime ich do\u00a0<em>\u0161\u00fa\u013e\u010dokov.\u00a0<\/em>Konce listu zatla\u010d\u00edme dovn\u00fatra tak, aby obsah bol v liste dobre zabalen\u00fd. Jednotliv\u00e9 plnen\u00e9 kapustn\u00e9 listy sa volali aj\u00a0<em>prasiatka.\u00a0<\/em>Do hrnca na spodok prid\u00e1me asi 1 kg kvasenej kapusty, potom uklad\u00e1me plnen\u00e9 listy, navrch zasa d\u00e1me kvasen\u00fa kapustu a cel\u00e9 cibule. Var\u00edme na miernom ohni. Na z\u00e1ver prid\u00e1me z\u00e1pra\u017eku a paradajkov\u00fd pretlak. Privedieme do varu a odstav\u00edme. Podobne ako kapustnica aj\u00a0<em>s\u00e1rma\u00a0<\/em>m\u00e1 chute a v\u00f4ne pod\u013ea dom\u00e1cich zvyklost\u00ed, kvality surov\u00edn, pridan\u00fdch koren\u00edn a pochut\u00edn.
